White wines are allowed to mature in tanks and then bottles. Red wines are fermented in vinifi cators, where the matolin is selectively submerged. They are then matured in in the cellars below the André Winery Guesthouse in wooden barrels of French oak from the world- -renowned Seguin-Moreau cooperage. Another interesting feature of the nursery is the vast wine archive, enabling guests to taste outstanding wines from the best vintages from 1951 to the present. The goal of our work is to live up to the ancient wisdom of Plutarch: “Amongst beverages, wine is the most useful, amongst medicines the most palatable and amongst foods the most tempting”.
